Ellis Wines Cloudy Bay Pinot Noir

New Zealand is a fascinating land, where nature, sea and a gloomy climate at the right point, allow wine producers to achieve great results. Unfortunately in small numbers, though. Cloudy Bay is probably new Zealand's best-known company. Its Pinot Noir vineyards are located south of the Wairau Valley, where the soil is clayey and gravelly. The harvest takes place between the end of March and the beginning of April. The grapes, carefully selected, are quickly transported to the cellar to be processed. Part of the bunches are destemmed and part are instead sent to maceration again with their stalk. This particular technique has been perfected over the years and has the advantage of allowing a greater extraction of tannins from grapes. After vinification, the wine rests for about a year in oak barrels French, only partly new. The result is a wine characterized by a beautiful bright ruby red color. On the nose notes of red fruit, violets and sweet spices. In the mouth, on the other hand, it shows a good structure and a pleasant softness. It is difficult to imagine a Pinot Noir from the new world more elegant and satisfying.
